All three games you've mentioned are very taxing, therefore the behavior you've experienced is typical. Without vsync enabled, you're going to see large framerate dips that cause stuttering.
For example, you may be running at fps one moment, but then you'll drop to fps the next. Most people will definitely feel a stutter when the framerate dips like that. On the other hand, when vsync is enabled you're not going to experience these large fps drops your card can maintain 60 fps for the most part , therefore the stuttering is not going to be nearly as bad.
It'd be different if you were running at fps with dips to fps, but I seriously doubt you're hitting those numbers considering how taxing these game are. Ok, that makes sense, but how does that explain the fact that the games run smoother in windowed mode. If I play the same scene in Crysis Warhead one of the underground levels, where my frame rates are in excess of , and using a controller, if I turn degrees, the game is noticeably smoother in windowed mode versus full screen mode.
In full screen mode, as I'm turning degrees my frame rates are above , the game is choppy. If turn degrees in windowed mode, it's super smooth. Perhaps it's just Crysis? Hard Reset and Serious Sam 3, for example, my frame rates are super smooth with vsync off. No stutters from what I can tell. I'm not sure exactly what's going on there. It could be a driver bug, but maybe not.
Windowed mode usually comes with a performance hit. Your max framerate may be reduced when running these games in windowed mode, therefore the fps drops aren't as pronounced. VSync can be really helpful when your PC is capable of rendering way more FPS than your monitor is capable of displaying. The graphical artifacts caused by an excessive amount of frames per second can often be just as bad as having too few. Nothing is perfect, and neither is VSync.
However, beyond that, both AMD and Nvidia have their own proprietary sync techs that work similarly to VSync — usually better. This helps to eliminate the large performance hit caused by VSync.
